Bell Pepper Pasta
What
Sauce:
- 3 bell peppers
- onion, same volume
- 2 tbsp tomato paste
- half a head of garlic
- sun dried tomatoes
- 1 tsp chili flakes
- 3 dl heavy cream
Requires a blender. Make a large batch of the sauce, it can sit in the fridge for some time. For assembly:
- pasta with large surface area
- butter
- hard cheese (ideally pecorino)
How
- Thinly slice the peppers and onions. Start them in a pan with olive oil. Salt and pepper to taste, cook until softened
- Add the garlic, sun dried tomatoes and chili flakes. Tomato paste directly onto the pan for browning, cook until the sharp tomato taste is gone
- Add heavy cream, simmer for another 5-10 minutes
- Blend
- Reheat the sauce in a pan, add butter. Boil pasta in a different pot
- Off the heat, add the pasta back into the sauce, as well as the cheese. Use pasta water to reach ideal consistency
