Braised Red Cabbage

Ideally, in a large sautee pan with a lid.

How

  1. Slice the onions and start sweating them on oil
  2. Add the sugar and sautee until caramelized
  3. Thinly slice the cabbage and add to the mix. Salt and pepper to taste, then cook on high heat until it starts releasing moisture
  4. Add caraway seeds, and put the lid on for 40 minutes. Stir it a few times so it cooks evenly
  5. If there’s a lot of liquid in the pot, take off the lid and evaporate on high heat. Finish up with the vinegar
