Braised Red Cabbage
What
- fat or olive oil
- 2-3 red onions
- 2 tbsp brown sugar
- 1 small or half a large red cabbage
- caraway seeds
- 3 tbsp applecider or balsamic vinegar
- optional 2 apples or a few prunes
Ideally, in a large sautee pan with a lid.
How
- Slice the onions and start sweating them on oil
- Add the sugar and sautee until caramelized
- Thinly slice the cabbage and add to the mix. Salt and pepper to taste, then cook on high heat until it starts releasing moisture
- Add caraway seeds, and put the lid on for 40 minutes. Stir it a few times so it cooks evenly
- If there’s a lot of liquid in the pot, take off the lid and evaporate on high heat. Finish up with the vinegar
