Broccoli Soup
What
- butter
- onion
- garlic
- broccoli
- optional few carrots or celery
- potatoes
- optional bouillon cube
- salt, pepper, nutmeg
Garnish:
- goat/cheddar cheese
- olive/pumpkin oil
- sunflower/pumpkin seeds
A blender is required.
How
- In a pot, sweat the onions on butter. Garlic goes in next
- Cut off the broccoli florets. Peel the stem and cut it up as well. Put them into the pot with some water
- Peel and slice carrots/celery and potatoes. Water until submerged
- Salt and pepper to taste. Don’t forget the nutmeg
- Bring it up to a boil and simmer for 30 minutes
- Blend it
- Garnish with the eternal cream soup combo: cheese, oil and seeds
