Coleslaw
What
Fresh:
- half green cabbage
- half red cabbage
- 3 medium carrots
Dressing:
- 400g mayonnaise
- 3 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp dijon mustard
- black pepper, no salt
- celery seed (never had any, could probably sub with caraway)
A food processor is a blessing, a sharp knife is a requirement.
How
- Slice the cabbage as thin as possible with a knife
- Shred the carrots
- Add salt, mix it together. Crush with hand, if cut with knife it needs more effort
- Weigh it down, and leave it for ~30 minutes to draw out moisture. Otherwise this liquid will go into the salad, and nobody likes the bottom 10% of salads
- Squeeze out the remaining juice
- Put together the dressing, mix it until homogeneous. It should be on the creamy side, add mayo if too runny
- Mix all the things
