Kohlrabi Stew
What
- 6-8 medium kohlrabis
- salt, pepper, turmeric powder
- optional fat and flour roux + garlic/sour cream
Meatball:
- 500g ground pork
- 1 sweet long pepper
- 1 onion
- rice
- salt, pepper, paprika powder, garlic powder
- fresh or dried parsley
- optional egg
A deep skillet or a wide pot. It’s easier to drop the meatballs in, when the surface area is large.
How
- Clean and peel all the vegetables
- Dice the kohlrabis into 2cm cubes. Into the pot they go, with salt, pepper and turmeric powder. Water until everything is submerged. High heat, we are on a timer now
- Into a large bowl go the finely diced onion and pepper, as well as the meat, rice and all the spices
- If the meat cannot hold everything together, add an egg
- Mix thoroughly by hand. Form medium sized balls, and drop them into the pot. Make sure they are submerged, so they begin firming up on the outside
- Up to a boil, and simmer for 30-45 minutes
- Optional roux rántás. Don’t forget to temp with the cooking liquid
