Liver and Onions

What

Deliberately undercooked, underseasoned. Works without the onion or paprika. When kept cold, it’s also ideal to spread on bread.

How

  1. Slice the onion into salad strips (root to top)
  2. Wash the liver and cut into uniform sized pieces
  3. Start wilting the onion on fat
  4. Add the liver. Salt and pepper to taste
  5. Take off the heat when it’s still pink inside. The residual heat will finish cooking
  6. Add paprika
