Liver and Onions
What
Deliberately undercooked, underseasoned. Works without the onion or paprika. When kept cold, it’s also ideal to spread on bread.
- chicken liver
- equal amount of onion in volume
- fat, preferably duck
- salt, pepper and sweet paprika
How
- Slice the onion into salad strips (root to top)
- Wash the liver and cut into uniform sized pieces
- Start wilting the onion on fat
- Add the liver. Salt and pepper to taste
- Take off the heat when it’s still pink inside. The residual heat will finish cooking
- Add paprika
