Pasta al Tonno
What
- olive oil
- garlic
- pepper, oregano, basil
- canned, peeled, whole tomatoes
- tuna
- dried pasta, spaghetti, linguine
Optional:
- olives
- capers
- anchovies
- red pepper flakes
- marinated artichokes
- parsley
- hard cheese
How
- Chop garlic, start on olive oil
- Optionally, infuse the oil with red pepper flakes, capers, anchovies
- Once fragrant, crush the tomatoes with hand, add to the pot
- Pepper to taste, no salt yet (remember the tuna and cheese!). Dried oregano, basil
- Cook very little and keep the freshness of the tomato. Or cook the edge off of it, the longer the better. I prefer the latter
- Add the tuna. Chopped olives and artichokes are good too
- Cook the pasta al dente. Mix with the sauce
- Plate with hard cheese and optional chopped parsley
