Pasta al Tonno

How

  1. Chop garlic, start on olive oil
  2. Optionally, infuse the oil with red pepper flakes, capers, anchovies
  3. Once fragrant, crush the tomatoes with hand, add to the pot
  4. Pepper to taste, no salt yet (remember the tuna and cheese!). Dried oregano, basil
  5. Cook very little and keep the freshness of the tomato. Or cook the edge off of it, the longer the better. I prefer the latter
  6. Add the tuna. Chopped olives and artichokes are good too
  7. Cook the pasta al dente. Mix with the sauce
  8. Plate with hard cheese and optional chopped parsley
