Potato Leek Soup
What
- leek (approx 3 large ones)
- potatoes of the same amount
- butter or bacon
- garlic
- bouillon cube or stock
- white pepper
- nutmeg
- cream
A stick blender is optional.
How
- Render the bacon on olive oil. Start with butter and oil if there’s no bacon
- Chop up the leak and potatoes, add them to the pot
- Add water, garlic, a bouillon cube, salt, white pepper and nutmeg
- Simmer until the potatoes are soft
- Blend
- Optionally add heavy cream, and bring it up to a boil again
