Split Pea Stew

Don’t cheap out on the vegetable mix. That’s most of the flavor.

How

  1. Soak the peas in more water than it’s required to submerge
  2. Render the bacon. Start sweating onions
  3. Slice and start cooking all the vegetables
  4. When they are all soft, drop in the peas. Salt and pepper to taste, don’t forget the paprika
  5. Add water, it can be a bit soupy. Bring it up to a boil, and simmer with the lid on
  6. It’s ready when it’s past al dente, and peas are starting to burst. That’s the most convenient thickener one could possibly ask for
