Split Pea Stew
What
- 500g yellow split pea
- bacon or fat
- onion
- garlic
- optional leek, celery, bell pepper or similar vegetables
- sweet paprika
Don’t cheap out on the vegetable mix. That’s most of the flavor.
How
- Soak the peas in more water than it’s required to submerge
- Render the bacon. Start sweating onions
- Slice and start cooking all the vegetables
- When they are all soft, drop in the peas. Salt and pepper to taste, don’t forget the paprika
- Add water, it can be a bit soupy. Bring it up to a boil, and simmer with the lid on
- It’s ready when it’s past al dente, and peas are starting to burst. That’s the most convenient thickener one could possibly ask for
