Tapioca Pudding
What
- 65g small pearl tapioca
- 1 can (400ml) coconut milk
- vanilla extract
- honey
Toppings:
- 1 can mango in syrup
- berry sauce with optional crushed pistachio
Portioned into small glasses. One tiny dessert a night.
How
- Heat the coconut milk
- Add tapioca, lower the heat. Cook until mostly soft, but still chewy
- Add the vanilla and honey
- Pour into glasses
- Cut the mango across the grains, otherwise it’s impossible to chew later. Put on the top of the glasses
- Plastic wrap the glasses, into the fridge they go
