Tapioca Pudding

Toppings:

Portioned into small glasses. One tiny dessert a night.

How

  1. Heat the coconut milk
  2. Add tapioca, lower the heat. Cook until mostly soft, but still chewy
  3. Add the vanilla and honey
  4. Pour into glasses
  5. Cut the mango across the grains, otherwise it’s impossible to chew later. Put on the top of the glasses
  6. Plastic wrap the glasses, into the fridge they go
