Zucchini Pasta
What
- 500g round pasta
- 450g zucchini
- anchovies
- garlic
- 1 large onion/shallot
- chili flakes
- hard cheese
- olive oil
- lemon
Best in a wide and not too shallow pot. Something able to hold all the pasta.
How
- Start the alliums on olive oil
- Add anchovies and chili flakes
- Add zucchini, salt and pepper. Melt it
- Cook the pasta al dente
- Add pasta to the pot with some pasta water and grated cheese
- Lemon to finish
